These days, it's rainy and dark and by late afternoon, things are feeling really gloomy. Sometimes the whole evening routine of dinner, bath and bed can seem really daunting. All hands on deck! So it's nice to have a simple meal that comes together quickly to hasten things closer to bedtime. Step-by-step instructions for one of my favorite quick weeknight meals, after the jump.
While I'm pretty good at coming up with recipes, I'm terrible at giving them names. If you have a name idea for this one, feel free to share it with me! This recipe starts with wonderfully simple, yet rich ingredients. You'll need:
- 8-10 strips of bacon, cooked and cooled
- One pint cherry tomatoes, halved lengthwise
- 6 ounces of mushrooms sliced
- Half a pound of linguini or similar, cooked and drained
Start by frying up the bacon and setting aside to cool.
Reduce heat to medium/medium-medium-high and throw the cut tomatoes in right on top of that bacon grease to cook. Mmmmmm.
Now is a good time to get a salted large pot of water on to boil for the pasta. Once it's at a rolling boil, add the pasta and cook to al dente according to package directions.
When the tomatoes are getting soft and losing their shape, add in the mushrooms, stirring occasionally.
After the mushrooms have softened, cut the cooled bacon directly into the pan.
Throw your cooked and drained (and hopefully still hot and not sticking together) pasta on top.
Toss to coat, plate and serve with a simple green salad with vinaigrette, lots of fresh grated Parmigiano-Reggiano cheese, and pepper to taste. Delicious! And massively comforting.
